I am going to take notes on what you wrote and try your suggestions.

It's interesting you mentioned NC moonshine. Back in the very early 90's when in NC I met some reservist fellows from Boone county. They would come up to Ft Bragg about once a month and were known to bring up some quart jars of moonshine. Of course, dumbass me failed to give any of it a try and I've kicked myself in the ass ever since.
