Your wife, bless her heart, sounds like she will be engaged in projects similar to those offered to students in the Destination Imagination programs that can be found in many schools. DI is however an extracurricular activity; students sign-up to work at night and on weekends with an adult volunteer. Basically, the kids do the "heavy-lifting" of planning and producing something that will serve a specific purpose, while the adult is there as a facilitator of sorts (I think). I know this isn't exactly what your wife has to deal with but the DI website above may help. And the Internet in general is surely a great resource. Good luck!
