Enso House has had three patients in a row who lapsed into long comas at the end of their dying process, resulting in long vigils for their families and caregivers. I think that's what Ann meant by "animal body dying": no response from them on a "human scale", just purely an "animal" process taking over (maybe a comparison to childbirth is accurate) and then her sense that no one there could really say what or where their spirit was or what was going on internally for them.
