I recently drove up to Houston for the day to meet some friends from a jobs (contract) I took up there about 2 years ago. Anyhooo a girl there named Hanh (pronounced Haan) that worked with me brought this dish that had a bowl of basil, a bowl of shredded papaya(which had little if any flavor), beef jerky and she brought like a soy sauce. I emailedfor the recipe and here is what she sent:

- shredded green papaya
- soy sauce
- 2 limes
- beef jerky (buy the soft one)
- basil


1. Chopped up the basil leaves in 3 or 4
2. Tear/or use the scissor to cut the beef jerky
into
small strips
3. wash the shredded papaya (you can deep them in
water with
about 1 tsp salt for 2 min to release any strong
taste from it)
Take it out, make sure to squeeze the most water
out of it as possible
Now the sauce (the main thing)
Mix in a bowl.
For each half cup of soy sauce, use one cup of
filtered water (preferable boiled water, but not
hot)
Add about 2 table spoon sugar, dissolve the sugar
into
the sauce
Squeeze in the lime juice
Stir them up, keep adding sugar or lemon depending
on
your taste (whether you want it salty or a little
sour)

Whenever ready to eat, mix papaya, basil, beef
erky
in your plate and pour the sauce on top. :)

She also brought some kind of fried jerky like tofu that tasted just like chicken (because a girl from India there was a vegeterian). I also threw this on top with the shredded jerky.

Good stuff. I got 3 bowls :):)
