OK...ALL Montreal Bagels are made completely differently than any Bagel you will find in the US, and basically worldwide.
They use different dough mixes for one (don't know what the secret is..but it tastes slightly sweet). They are hand rolled (very cool to watch..some of these guys are open late, and you can watch 'em do it as you're trying to sober up from a night on the town, or coming down from a pot buzz..). They are then thrown in some sort of oil/water bath, but not cooked there. They come out wet, have seeds added (sesame, poppy seed), then are placed on long wooden slats, and put in a brick or stone wood-fired oven. When they come out, the smell is heavenly, and once slightly cooled, you can take 'em home fresh. They do...literally melt in the mouth. The remainder can be refrigerated or frozen. I recommend slicing and always toasting them before adding butter, jam etc.
Fairmount is a favorite ; I always liked St.Viateur, Van Horne etc.. They all have the basic Montreal taste.
Same with smoked meat. (Can't get this anywhere else like Montreal).
The one that is touted is Schwartz's on St.Lawrence (the Main); line-ups always, but they always get you served, and attempt to clog your arteries as quickly as possible. Don't look at the menu...I don't even think they have one, just order a hot smoked meat on rye, get a sliced pickle, and fries. Add vinegar and ketchup to the fries. Drink a Cherry coke with it...a true Montreal experience. My preference is Snowdon Deli (Deli Snowdon en francais), located on Decarie Blvd near Queen Marie Rd .
There is an internet site , I think Lenny's which can send you all of these. The meat is vacuum packed, totally safe. Just boil, slice and eat. Nearly as good. They also send Montreal Bagels.
