Well, Byrds version of "Tambourine Man"...; they did too much Dylan, but that one stands out, as well as their version of "It's All Over Now, Baby Blue", later, when Clarence White was in the band. It's from the Ballad of Easy Rider LP...find it if you can, that version really sizzles me. Sooo amazing.

Another interesting "cover"...I don't know if you can call it that, is Sun Kil Moon's version of a Modest Mouse tune entitled "Truckers Atlas". The reason I hesitate to use the word "cover" is that Mark Kozelek only used the original lyrics. The melody and phrasing are so totally restructured, that I suppose it's really not a cover in the true sense, which, I think must at least convey the melody of the original. But...very interesting listening, especially if you compare his version with the original Modest Mouse side by side. The reaction I got (hearing the Modest Mouse original afterwords was WTF????)..
